20 Saucy & Satisfying Canning Recipes

Canning Season is in full swing and my home like many of yours it is full of the sweet scents of summer turning to fall. I really think it is my favorite time of the year. When our gardens deliver and farm markets are full of sweet ripe vegetables all waiting for us.

I love the history of canning. I think we all owe a debt of gratitude to our forefathers for such a delicious discovery. According to Food Reference.com  ” The canning process dates back to the late 18th century in France when the Emperor Napoleon Bonaparte, concerned about keeping his armies fed, offered a cash prize to whoever could develop a reliable method of food preservation. Nicholas Appert conceived the idea of preserving food in bottles, like wine. After 15 years of experimentation, he realized if food is sufficiently heated and sealed in an airtight container, it will not spoil.”

“An Englishman, Peter Durand, took the process one step farther and developed a method of sealing food into unbreakable tin containers, which was perfected by Bryan Dorkin and John Hall, who set up the first commercial canning factory in England in 1813. As more and more of the world was explored, and as provisioning armies took on greater importance, the demand for canned foods grew. Thomas Kensett, who emigrated to the United States, established the first U.S. canning facility for oysters, meats, fruits and vegetables in New York in 1812.

These men paved the way for us to preserve so many of the food we love. I know for myself personally I love canning. I find it rewarding. I love in the middle of winter being able to open a jar of green beans or peach pie filling and know it is delicious because I did it myself.

7. Adventures of a Nurse- Dill Garlic Pickles look so good. I liked this recipe because you just bring the brine to a boil and set in the fridge. No pressure cooking, No hot water bath. Easy Peazy!

8. Like Mother Like Daughter – Bottled Peaches – Looks Wonderfully Refreshing! There is something about Peaches that just make me happy.

9. Love and Olive Oil – Blueberry Yuzu Preserves – I had to admit I needed to look up what Yuzu was. So I turned to Wikipedia “It is a citrus fruit and plant originating in East Asia. It is believed to be a hybrid of sour mandarin and Ichang papeda. The fruit looks somewhat like a grapefruit (though usually much smaller) with an uneven skin, and can be either yellow or green depending on the degree of ripeness. Yuzu fruits, which are very aromatic, typically range between 5.5 and 7.5 cm in diameter, but can be as large as a grapefruit (up to 10 cm or larger).” How cool. Now I am going to be searching for it to try. Thank you Love and Oil Oil for introducing me to a new fruit.

10. Our Best Bites – Tomato-Basil Simmer Sauce with Roasted Garlic (For Canning)  Yum! I love Simmer Sauces and use them all winter long. I love the smell and how truly amazing it makes your home. Oh my! With fresh made bread. Out of this world!

11. The Organic Prepper – Canning Spaghetti Sauce With Meatballs (Grocery Store Version) – I’ve never canned Spaghetti Sauce with the Meatballs but you can rest assured I will try it now. I’m already hungry looking at the jars.

12. Little House Living – Canning Chicken  What a wonderful way to store Chicken when you find a sale or just have too much to use. I prefer this method over freezing.                So tender!

14 - Spicy Rhubarb Chutney
14. An Oregon Cottage – Spicy Rhubarb Chutney – Chutneys are definitely a wonderful. I love serving them over cream cheese with crackers at holiday or party time. I know a few of you may be unfamiliar with Chutney’s. Basically Chutney is a pretty close to a jelly consistency, a lot like a relish but is a nice mixture between sweet and sour. You can literally make 100’s of variations. Many people make it fresh but I have always canned it and its so nice to find recipes like this.

15. Over the Big Moon – Canning Cilantro Lime Enchilada Sauce – This flavor combination totally intrigued me. I would love this over our recipe for  Freezer Burritos and Enchiladas

18. The Frugal Navy Wife – Canning Peach Pie Filling – I have to say Peach is about my all time favorite Pie Filling. To me in the winter it makes me just plain happy. It reminds me Winter doesn’t last all that long 😉

19 - Roasted Garlic Jam
19. Love and Olive Oil – Roasted Garlic Jelly – I adore Garlic and when I saw this. I thought “Where have you been all my life” haha. I cannot wait to try this one.

20 - Homemade Giardiniera Mix http://thegardeningcook.com/home-made-gardenia-mix/
20. The Gardening Cook – Homemade Giardiniera Mix – This year I am making this Giardiniera Recipe. I always mean to can it then for some reason I end up doing each vegetable individual. This recipe looks just delicious.

What was your favorite recipe out of this Canning Round Up?? I can’t pick! Maybe I won’t have too and I can try them all. YUM!

Thank you to all the bloggers who contributed recipes. Your recipe left me wanting to run to the kitchen and start canning again. I think we are all going to be very happy in the middle of winter when we open a jar of our canned goodies and say “I made that 🙂 ”

    Your tenth picture of the tomato-basil simmer sauce with roasted garlic looks amazing! The bright red colors with bits of basil in there looks like a winning sauce. I would imagine that if you were going to make it and sell it to the public, you’d need some type of machine that can handle a lot of canning. Using the right kind of equipment could help keep the freshness in and get it out to your customers.
