I’ve spent most of this week coming up with our menu for the “Big Game”. There are so many dishes I wanted to try out and a few I loved like this Chicken Fajita Boats. They are delicious! I am so impressed with the Old El Paso Soft Taco Boats that I will be using them all the time. I love the idea of having individual portions instead of many hands dividing out Fajita mix. It also makes it easier for your guests to fill their plates 🙂  Of course, you never go wrong with Avacado’s from Mexico and it definitely kicked this dish up a notch to great!

Chicken Fajita Boats

 

Chicken Fajita Boats

Ingredients:

1 pound of chicken breast
1 Red Pepper, sliced
1 Green Pepper, sliced
1 onion, sliced in slivers
1 Old El Paso Soft Tortilla Taco Boats Dinner Kit (COUPON FOR SAVINGS HERE)
1 Old El Paso Fajita Seasoning Mix
1 Avacado
Sour Cream
Salsa

Directions:
Slice onion and peppers into long slivers. Slice Chicken into long skinny pieces.
Follow the directions on your Old El Paso Fajita Seasoning Mix.
Garnish with Sour Cream and Salsa
Pit, Peel and slice Avacado. Put slices in your boats. Serve!

Here’s a hint on picking the best Avacado. I didn’t know this for many years til a wonderful man in the Wegmans Produce Section filled me in. Select Avocados that are a very dark green without any indentations or soft spots. The Avacado should feel heavy and firm. Next, Take off the stem. If it’s brown, your avocado is too ripe, meaning likely has bruising and brown streaks inside. If it’s a yellowish green, you’ve got a great Avacado 🙂 I hope it helps you make the best selections.
