Doritos Taco Salad for a Crunchy Change
I recently went to a get together with my girlfriends and all our husbands and families. It was potluck and with it being the end of the school year, the best I could do was cut up veggies and dip. Yes, I know, uninspiring! However, it was quick and easy! When I saw my husband and the other guys going back for seconds of a salad, I was shocked. How often do men pass up the dessert table for seconds of a salad? When I asked him about it, he said it was a taco salad with Doritos! That D word explained it all! It has now become part of our twice a month dinner rotation. I make something similar with chicken (recipe coming soon!) but this added in lettuce, beans, dressing, and more to make it a perfect springtime/summery salad!

Our summers are filled with pasta salad, chicken salad, egg salad, wedge salads, and the Doritos Taco Salad gives a new variety to our summer salad playlist! You can add to it and change it for your personal preferences with ingredients you like to add in your salad.

Start off with browning your meat and adding in the taco seasoning, as instructed on the packet.

You can add it in the salad hot, but I prefer to add it in after it has cooled a bit. Otherwise, I found that the lettuce will wilt, the cheese melts, and the salad isn’t as fresh and vibrant. I don’t put the meat in the refrigerator because the grease in it makes it congeal. While your meat is cooling, you can start getting the rest of the salad ready.

First, chop up the lettuce. For home, I do a half a head of lettuce and chop into bite size pieces. Add in tomatoes, cheese, chili beans, and onions. If you love olives, add those in along with any other ingredients you want. Once your meat has cooled slightly, add in your meat and toss. Add in the catalina dressing to your liking.

Tip- Add in the dressing a little at a time and toss as you are adding it. A little goes along way and it can overpower the rest of your salad.

Add crushed up Doritos on top and always leave the bag out for your family or guests to add more as they are eating their salad. If you add the Doritos into the salad, it becomes soggy instead of giving it the added crunchy texture. DORITO TACO SALAD 5

I recently took this salad to a work luncheon and it was gone within minutes. I even tripled all the ingredients and it still was not enough! It is an easy salad to throw together for a quick dinner or summer potluck with your friends!

Recipe type: salad
Ingredients
  • 1 lb hamburger meat
  • 1 packet taco seasoning
  • ½ head lettuce, chopped
  • ½ cup tomatoes, chopped
  • ½ sweet or red onion, chopped
  • 1 cup cheese, (or more!)
  • ½ bottle catalina dressing
  • 1 can chili beans or pinto beans
  • Doritos
Instructions
  1. Brown meat in skillet.
  2. Mix in taco seasoning according to package.
  3. Slightly cool meat.
  4. Chop lettuce, tomatoes, and onion.
  5. Mix together lettuce, tomatoes, onions, cheese, and cooled taco meat.
  6. Drain and rinse beans. Toss into salad.
  7. Toss in catalina dressing sparingly.
  8. Top with crushed Doritos.
  9. Serve!
