Patriotic Berry Tarts

When Memorial Day and the 4th of July come around, I am always asked to attend several gatherings for fun and laughter with friends and family. Sometimes I even have small brunches at my house, because what is a better way to spend the day that we are thankful and give thanks for our freedom than with the ones we love? Whenever I go to these gatherings, I am always asked to bring my Patriotic Berry Tarts.

Most tarts are made with a pie crust by using your average pie crust or by making a cookie dough crust, similar to this one made by Taste of Home.While those are delicious, they can also be super messy trying to cut the tart, plate it and then get a piece of all that goodness onto your fork. When I make mine, I use mini Phyllo Shells so that the tarts are individual and so much easier to eat. These can be prepared ahead of time and then put together before you plan on serving them. If you wish, you can also drizzle caramel sauce, chocolate sauce, or any sort of sauce for an added zing to your tart.

Ingredients
  • INGREDIENTS
  • 1 package mini phyllo shells (I used Athens)
  • 4 oz frozen whipped topping
  • 4 oz Philadelphia Cream Cheese - strawberry flavor
  • ½ cup powdered sugar
  • Strawberries
  • Raspberries
  • Blackberries
  • Blueberries
  • DIRECTIONS
  • 1. Place phyllo shells on a cookie sheet and heat in oven according to package directions.
  • 2. Let cool on cookie sheet while you prepare filling.
  • 3. In a medium mixing bowl, add the cream cheese and whipped topping. Beat with an electric mixer on low speed for about 1 minute.
  • 4. Add the powdered sugar and mix on medium speed until light and fluffy.
  • 5. Place filling in a pastry bag or Ziploc bag with the corner snipped off.
  • 6. Sprinkle phyllo cups with powdered sugar.
  • 7. Pipe the filling into each cup.
  • 8. Top each pastry cup with your choice/combination of berries.
  • 9. Sprinkle with more powdered sugar.
  • 10. ENJOY!!
