I threw some sourdough pita bread dough on the grill as well in a cast iron skillet first; it’s so cool to see them puff up with air! Don’t’ miss my pita bread recipe at the bottom of this post! Incredibly easy but don’t tell anyone. Just go along with it… you have superpowers!

What a fun way to eat at a cookout! Who needs a boring old hamburger bun!? Flat breads are a tasty way to change things up!

Before we get to the London Broil, have your tzatziki sauce ready! I use Greek yogurt, finely diced cucumber, minced garlic, salt, lemon juice and heavy on the dill! Add ingredients to taste – if you’ve never made tzatziki sauce before one ingredient may be you favorite so you’ll soon be tailoring it to your taste buds!

I begin with a London Broil cut from Walmart and marinate it. Anywhere from 2-12 hours; the longer the better. Be sure and have your coals hot when you begin grilling your meat.

3 Tbsp vegetable oil

1/3 cup soy sauce

juice of one lemon

3 Tbsp ketsup

3 cloves of garlic; minced

oregano and ground black pepper to taste

Grill 5-8 min per side and let meat rest 5 minutes covered when it comes off the grill. Slice thinly (cross grain).

That’s it! Simple, delicious, and fun! That’s how we like things around here!

For those of you wanting to try your hand at homemade pita bread, you’ll be able to cook them in a skillet on the stove, or on a stone or cookie sheet in the oven or on a cast iron skillet on the grill! The important thing is that your cooking surface is very hot before you put your dough on to cook. (Approximately 450 degrees hot!)

Ingredients:

2 cups flour

½ cup water

½ tsp salt

½ cup sourdough starter

1 Tbsp olive oil

Place all ingredients in countertop mixer for about 3 min. Place dough in an oiled bowl and cover with plastic wrap at room temperature to develop flavor; 4-6 hours. You can also leave this dough overnight. Some people even have the patience to let it culture for 24 hours! But one thing is certain- you cannot beat the flavor that sourdough brings to recipes.

Divide the dough into 8 equal balls, form into disks by hand and then roll out so that it’s slightly thicker than a tortilla. Quickly toss your flat dough onto hot surface, and come back in 3-4 min. Magic happens in those few minutes. (Remember – you have superpowers!)

Pita bread can be covered with a towel and kept warm until it’s time to use them. They can be kept flat and “rolled” with ingredients or slit open to form a pocket.
