Zucchini Chicken Bake Recipe

I love to entertain, especially when my daughter’s come into town. One of my precious girls is going to be getting married soon, so we have been spending a lot of time with each other, which is perfectly ok with me. We love to make dinner together and we are all obsessed with anything Italian. Sometimes I think we are full blooded Italian, but I will leave that for another post.

Zucchini Chicken Bake

For dinner one night, we decided to visit our local grocery store and grab random ingredients and come home and see what we could make with it. It is a really fun game that everyone should try at least once a month. Well each of us went to pick something out, and I wanted to find some sort of sauce. I am a huge fan of Mezzetta, so when I saw that they started making their own marinara I just had to get it. What made this marinara even better was they are all natural with no sugar, paste and uses San Marzano Tomatoes!! That makes it even better, plus it is available in 6 delicious flavors.

When we met back up, we each had some pretty neat ingredients and we went home to come up with this one of a kind recipe. I would like to introduce you to our Zucchini Chicken Bake Recipe featuring Mezzetta Marinara. Keep reading to find out how to make it.

Chicken Zucchini Bake

To make our Zucchini Chicken Bake you will need the following ingredients.

3 Zucchini, sliced and diced
1 to 2 Chicken Breast, depending on size (cooked and shredded)(season with salt, pepper, onion powder and chili powder)
1/2 cup of red onion, sliced and diced
1 slice of bacon, diced (uncooked)
1 slice of bacon, cooked and crumbled.
1 cup mozzarella
1 cup Mezzetta Marinara in your choice of flavor

To make this Italian styled bake, you will need to do the following:
In a glass dish, place the diced zucchini, chicken, red onion, and bacon. Pour in Mezzetta Marinara Sauce and mix well. Top with cheese and sprinkle with crumbled bacon.
Cook at 350 degrees for 20 minutes.
Serve with a side salad.

I hope you enjoyed our recipe as much as we did. It was so fun to make and tasted simply delicious.
