I have always been a big fan of EASY! And berries lend themselves so well to easy, crowd pleasing desserts!  Why complicate things if we don’t have to, am I right? Blueberries are available to us year round, but during the summer – oh boy!  It’s so nice to pick your own or take advantage of the great prices for them at markets and stores.

Blueberry Crisp is a favorite for us – and I love dessert recipes that are rich but you still  taste all that freshness in the fruit! I enjoy that about crisps… mouth-watering taste of the whole berry, not the cooked down, gelled up version of what was once a berry.

Look at all that potential! Above are my blueberries tossed in sugar and cornstarch. And they are making me daydream, so let’s move right along, shall we?  🙂

Blueberry Crisp Recipe - Berries Bring Easy Desserts To The Table

Ingredients:

2 Tbsp cornstarch

1/2 cup sugar

1 pound blueberries

1/2 cup brown sugar

1/2 cup rolled oats

1/4 cup chilled butter, cut into small pieces

1/3 cup flour

2 tsp vanilla

Directions:

Preheat oven to 375. Combine first 3 ingredients until blended. Spray 9 inch baking dish with cooking spray and transfer berry mixture to your dish.  Place brown sugar and vanilla in a bowl and stir until vanilla is incorporated. Then add oats and flour.  When combined, cut in butter until mixture crumbles somewhat. Spoon over berry mixture and bake for 30 minutes or until the top is golden.

Look at me – I’m still daydreaming! I love working with blueberries not just because they are delicious but because of their color!  So beautiful! They are stunning and enticing – you just can’t go wrong with blueberry crisp!

    we are huge blueberry fans! I love adding it to my jams I make, and our fresh morning oatmeal and even our smoothies! Oh man, nothing like a great blueberry treat! We would love this blueberry crisp recipe! Yum!
