Caramelized Snack Mix

It seems I am always in need of Snack Mix’s in my home. From family to guests stopping in I love being able to pull out a snack mix and sit down to catch up. One snack mix I just adore is Caramelized Snack Mix.  Making a big batch of this ensures I am always ready for company.

I love Chex. It’s the one ingredient I seem to always have a box or two of. Chex is so versatile for sweet or savory and anything in between.

Now on to the recipe my family adores.

Caramelized Snack Mix

Caramelized Snack Mix Recipe

8 Cups Chex Cereal ( I used Rice)

1 cup brown sugar

1/2 cup Light Corn Syrup

1/2 cup butter OR margarine

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon Vanilla

1/2 Cup Whole Raw Almonds (Optional)

Line a large Jelly Roll pan with Parchment Paper. Add Chex Cereal and 1/2 Cup Almonds. Place in 200°F oven while preparing Caramel.

Carmelized Snack Mix
Directions:

Combine brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan.

Stirring constantly, bring to a boil over medium heat. Boil 5 minutes Stirring Occasionally.
Remove from heat. Stir in baking soda and vanilla and mix well. NOTE: Mixture will foam.
Pour syrup over warm Chex® and Almond mixture, stirring to coat well.

Bake for 45 minutes, stirring occasionally. Remove from oven. Add Sprinkles if desired.

Cool; break apart. Store in tightly covered Ziploc® container.

    I would love to make the red velvet chex party mix. We love red velvet cake and this would be a neat alternative to the cake this year;)
