Eggplant & Sausage Lasagna Roll-Ups #PickedAtPeak

I love this time of the year. This is the prime time for all those delicious fruits and veggies that have been growing all spring to finally be ready to be picked and placed in a delicious dish for your family to enjoy. One of our favorite places we like to visit is the Farmer’s Market. There are so many veggies that are perfect for dishes ranging from breakfast to dinner and everything in between. One of my most favorite, and important, meals of the day is dinner. I have recently gone back to work at our local hospital and the transition has been something to get used too. I did not want to sacrifice a delicious and nutritious dinner, but I could not figure out how to do that since I have been working swing shifts. Browsing around Walmart one day, trying to find something that was wholesome and easy to fix was proving to be a rough task until I Came across the pasta aisle. There I found the Prego Farmers Market Sauce and all my fears washed away. After looking at the bottle and reading the ingredients, I could have dinner ready in less than an hour and ready to serve my family.

Walmart carried the whole line of Prego Farmers Market Sauces, and honestly, I didn’t have any idea which one I was going to grab. They all looked simply delicious. Running through the recipe binder in my head, I decided I wanted to make an Eggplant and Sausage Lasagna Roll-Ups for dinner. This is something my family would love and the leftovers could easily head to work with me the next day and still taste great. With that being said, I went with the Prego Farmers Market Roasted Garlic Sauce and the Prego Farmers Market Roasted Classic Marinara. It was the perfect addition to the flavor the eggplant and sausage bring to the dish.

Now, the vegetables I usually cook come straight from the farmer’s market, but Prego Farmers Market easily stood right beside those same veggies. All the ingredients that are in the sauces, such as vine-ripened tomatoes, garlic, and basil, are all picked at their peak of freshness. So it’s like you are making the sauce straight from ingredients from the farmer’s market. I was surprised when the sauces are made exactly like I would. With a dash of olive oil, black pepper, and oregano it was hard to tell which sauce was mine and which was Prego Farmers Market.

I couldn’t wait to get home and get to cooking. My Eggplant and Sausage Lasagna Roll-Ups are delicious and bursting with flavor. If you are looking for a quick, easy, hearty and welcoming dish to make for dinner tonight, you will definitely need to try this out.

Eggplant & Sausage Lasagna Roll-Ups #PickedAtPeak

To make my Eggplant and Sausage Lasagna Roll-Ups you will need the following ingredients:

1 large Eggplant
1 pound Bulk Sausage
1 jar Prego Farmers’ Market Fresh Sauce Roasted Garlicc
16 oz Ricotta cheese
16 oz Mozarella cheese
1 egg
Now making my roll-ups are easier than you think it would be:
Directions: Preheat oven to 350. Slice the eggplant legnth wise into thin pieces. Mix together Ricotta, egg and 10 oz of mozarella cheese. In a frying pan fry up sausage into crumbles until no longer pink. Spread cheese mix over eggplant, coat with sausage and roll. Use a toothpick to hold it in place. coat the bottom of a pan with sauce. Place each roll into pan. Top with additional sauce and bake for 60 minutes or until tender. Top with remaining mozarella and bake for an additional 10 minutes or until cheese melts.
