Quick and Easy Egg Casserole Recipe

I’m going to be transparent with you.

A lot of nights I cook like this.

I get behind on time with everything on the farm that needs my attention, and when dinnertime rolls around it’s far too common that I’m flying through the kitchen whipping something up off the cuff.  This is one of the dishes that was a result of my scurrying and one version or another of it has become a weekly meal for us.

Quick and Easy Egg Casserole www.lauraslittlehousetips.com Eggs are on top of my list of super foods!  Not only are they inexpensive, but I really enjoy their versatility – casseroles, quiches, breakfast burritos, hard boiled eggs – tons of options there!

And they pack such a powerful protein punch!

Quick and Easy Egg Casserole

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: Serves 8

Quick and Easy Egg Casserole

Ingredients

  • 1 bag (1 lb 6 oz) of frozen broccoli flowerets, defrosted and chopped in food processor (or spinach)
  • 2 cups cheddar or mexican blend shredded cheese
  • 18 eggs
  • 1 cup green onions, chopped
  • 1 cup sour cream
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350
  2. Butter 9x13 baking dish
  3. Place broccoli or spinach in across bottom of pan
  4. Sprinkle cheese over broccoli
  5. In a mixing bowl combine remaining ingredients and mix until thoroughly incorporated
  6. Pour over broccoli and cheese
  7. Bake for 40 minutes or until center is set
  8. Serve with Sourdough Toast

This recipe visits us weekly, as I mentioned. Sometimes I use sliced, leftover sweet potatoes for a ‘crust’, or maybe the main vegetable or seasonings are different.

    I have never made an egg casserole but would love to try one someday. I’m all about spinach and broccoli so this sounds like the winning recipe to me! Though I’ll probably take mine sans sour cream.

    I love how fluffy it is! I’m not much of an eggs for breakfast person (well, I am, but more occasionally than every morning), but my mother was visiting this week and made fancy egg dishes for breakfast every day. I’m forwarding this post to her because I’m sure she’ll make it often!

      pretty much! one time I had some cooked sweet potatoes leftover and i sliced them for a crust. I wasn’t putting much confidence in the end product but it was fantastic!!!
